This was a simple recipe with only a few ingredients! Cheap and tastes good is goal! The only thing that took so long to do was slice the potatoes. Whether you have as slicer or you cut them with a knife, you will get the job done. I keep the skin on the potatoes when slicing them.
This recipe fed 4 adults and a 5 year old with some leftovers for the next day!
Hamburger Potato Casserole Recipe

Ingredients:
- 6 potatoes (small-medium in size)
- 2 lbs of ground beef
- 2 cans of cream of mushroom soup (10-10 1/2 ounce cans)
- 1 1/2 cups of milk
- 2 cups of shredded cheese (I used Colby jack)
- Seasonings: salt, pepper, onion powder, garlic powder, Italian seasoning
Directions
- Preheat oven to 350 degrees
- Slice potatoes and set aside
- Brown ground beef and season with salt, pepper, onion powder, garlic powder and Italian seasoning to taste. Then set aside for later.
- In a mixing bowl, add in cream of mushroom soup, milk and salt/pepper to taste. Mix well until it is all combined together.
- Spray non stick spray into your casserole dish. (I used a 4 qt dish)
- Start layering in the pan: potato slices, beef, soup mixture and cheese. Repeat until you use up everything then top with cheese.
- Cover with foil and bake for 1 hour
- Remove foil after an hour and bake for an extra 30 minutes until potatoes are fork tender (meaning you can easily stab through them with your fork)
- When the 30 minutes are up, remove from oven and let sit for 10 minutes. Serve and enjoy!
